    Cappon magro is an ancient traditional Ligurian dish made with fish and vegetables. If you are looking for a unique gastronomic experience during your vacation in Genoa, Cappon magro is definitely an excellent choice. Various kinds of fish are used: sea bass, hake, mussels, scampi or shrimps and vegetables: green beans, carrots, cauliflower, potatoes, beet that will be used to compose the Cappon magro. The base should be gallette soaked in vinegar, then proceed by creating a sequence of layers, with the fish and with the vegetables, all alternating with the salsa verde trying to choose a chromatic order for the vegetables so that the final effect is pleasant. You just have to try it!

    A mixed fish fry and dessert will follow.
