    Different cooking class for making five appetizers to be enjoyed with good red and white Ligurian wine. You will be the ones wearing the Cesarine apron and, in my kitchen, you will prepare these excellent dishes. We will start with the cuculli that need leavening, we will cook the chickpea flour with water and oil for the panissa that we will then go to fry, you will make the dough for the cheese focaccia and learn how to roll out the pastry very thin, stuff it with stracchino and prescinseua (Ligurian cheese) and then it will be baked in the wood-fired oven (spring/summer period) or in the oven at home. The brandacujun, a typical Ligurian dish made with stockfish and creamed potatoes, flavored with taggiasca olives and pine nuts. Finally, the chickpea porridge cooked in the copper pan.

    This class was one of my highlights in Genova and Andrea was an amazing teacher! He took time to explain not only how to cook each dish but also the regional history about Genova’s cooking. By the time class was over I made three delicious Italian dishes and had some wonderful coffee courtesy of Andrea and his mom. Andrea’s English was extremely good and he was very fun to chat with! Absolutely do not miss his class :)

    Andrea and his mother were very pleasant to meet at the central Genova Market. Andrea's English was terrific in his delivery of the cooking process and was agreeable to change the proposed menu to a more complex and interesting foods to challenge my cooking experience. The Squid cleaned (UH) was new for me, cooked with some olive oil and olives delivered on fresh pasta we made, mushrooms deliciously fried added to more pasta, delicious cookies with powdered sugar on top! Along with a bottle of white wine to have every Italian meal complete. !
