In this course, we will dive into Ligurian cuisine with three recipes that best represent the region's tradition:
- - Cappon Magro: a traditional Ligurian dish, now rare in restaurants due to its complexity and high cost.
- - Walnut Sauce for Pansotti: a typical sauce prepared in a mortar, perfect for seasoning pansotti.
- - Canestrelli: sweets that are as simple as they are delicious. Cappon Magro has a special meaning for me, linked to a person I am particularly fond of. At the end of the evening, each guest will receive a recipe book as a memento of this authentic Ligurian culinary experience.

Cesarina from 2020Location: Cogoleto Languages: Italian, English, FrenchI've been passionate about cooking and regional recipes ever since, as a child, I enjoyed preparing gnocchi with pesto with my grandmother. I've always liked opening the house to relatives and friends, cooking for them, inventing opportunities to welcome them. At my table the dishes of the Ligurian culinary tradition, which comes from an indissoluble union between land and sea, just like our region: pansotti with walnut sauce, testaroli, Genoese top, stockfish in buridda, cuttlefish in zimino, tomaxelle, vegetables stuffed, ratatuja, chickpea porridge, focaccia... the list would be very long, they are all dishes to taste!
