The marble mortar, fresh Genoese PDO basil, pine nuts, Ligurian extra virgin olive oil, Parmigiano Reggiano and Pecorino: the iconic ingredients of authentic Genoese pesto take centre stage in an exclusive culinary experience in the heart of historic Genoa. This cookery class takes place in an elegant frescoed room overlooking Via Garibaldi, the famous Genoese street home to the Palazzi dei Rolli, a UNESCO World Heritage Site. Guided by Fabio, you’ll learn to prepare traditional pesto by hand using the ancient technique of the marble mortar, whilst discovering the stories, traditions and culinary secrets of Liguria. After a welcome toast with a glass of local Vermentino, you’ll get to enjoy the pesto you’ve made yourself with Genoese focaccia and bruschetta.
