Our experience begins with a stroll through our organic vegetable garden, where we’ll pick fresh, seasonal produce together. Using our own potatoes and flour, we’ll prepare homemade gnocchetti, which we’ll serve with a freshly made pesto using our basil, garlic, Parmigiano Reggiano, pine nuts and our prized Tenuta Amapola organic extra virgin olive oil. Depending on the season, you’ll also discover the flavours of our vegetables and our homemade tomato sauce. We’ll then knead our flour with sourdough starter to create delicious fried pizzas – both white and red – and fresh, handmade pasta, following the ancient traditions of Italian cuisine.

Every dish I prepare tells a story made of gestures passed down orally, never written. Gestures learned by watching, repeating, making mistakes. It tells of terracotta pots that have cooked for four generations, absorbing and releasing aromas over time. It tells of ingredients grown according to lunar cycles and of microclimate maps that only Nonna Assunta and Nonno Edmondo truly knew. It is only when these three elements come together that the magic is created—what my guests often describe as “a childhood memory I didn’t know I had.” Our terraced fields are not simply plots of land; to me, they are living guardians of Nonno Edmondo’s botanical wisdom. I grow only the varieties he selected through decades of patient observation of the unique microclimates of our estate. Tomatoes grow exactly where he discovered they achieve the perfect balance between sweetness and acidity. Aromatic herbs still follow the map he created, placing each plant where it receives the precise amount of sun and wind. Even the harvest follows the lunar cycles he used to keep track of only in his memory.
