    In my kitchen I will guide you on an authentic journey into the flavors of Parma, between tradition and passion.

    You will learn how to prepare family recipes, such as tortelli di erbetta or potato tortelli with soffritto, egg noodles, potato gnocchi, creamy risottos and fragrant sauces. We will end with a typical Parmesan dessert or an irresistible homemade tiramisu. A genuine cooking class, in the heart of Emilia, to discover true homemade Parmesan cuisine.

    This was one of the highlights of my time in Parma. Catia and her husband, Augusto, welcomed me warmly into their beautiful home and made me feel comfortable from the moment I arrived. Catia taught me how to make fresh pasta in her own kitchen with so much passion, patience, and care. Catia also taught me how to make tiramisu and honestly, it was the best tiramisu I have ever tasted in my life. Both the pasta and tiramisu were far better than other expensive restaurants. You can immediately tell that Catia truly loves cooking and sharing her knowledge. The class was supposed to have up to six people, and I was surprised and touched that they still went ahead even though I was the only one booked that day. That alone shows how dedicated Catia is to what she does, and how supportive Augusto is of her passion. They are such a lovely, kind, and generous couple. They even helped me book a taxi back to my Airbnb since I speak very little Italian, and they sent me home with the entire tiramisu all to myself. It’s such an incredibly thoughtful gesture. This was more than just a cooking class. It felt like being welcomed into an Italian family’s home. I left not only with new cooking skills, but also feeling inspired to take learning Italian more seriously. I would recommend this experience to anyone visiting Parma! It is truly unforgettable.

Augusto kindly helped with some translation when needed, and together they made the class feel relaxed and enjoyable.     Catia, our Cesarina in Parma, along with Augusto, her husband, welcomed us into their home to show us how to prepare some typical dishes of Parma. Four of us participated: grandparents and 2 college-aged grandchildren. To begin, we were shown to a table full with antipasti typical of the Parma area, including prosciutto di Parma, salumi, Parmigiano Reggiano cheese, assorted bread and crackers, open-faced sandwich squares, etc. We also learned about prosciutto (with an actual prosciutto ham as a visual aide) from Augusto, who worked many years in Langhirano, the major production centre for the Prosciutto di Parma. After enjoying the antipasti, we went into the kitchen to prepare 2 types of tortelli-and tiramisu for dessert. We enjoyed the pleasant company of our hosts and all the knowledge they imparted while preparing the dishes. Our 20-something grandchildren especially liked the personal quality of being with an Italian family in their home, and learning from and conversing with them. They even tried to speak a little Italian with our hosts. After enjoying our dinner together, we headed to Milan. Catia even packed a care-package of the extra tiramisu for our granddaughter (study abroad student) to take back to school in Milan. Grazie mille, Catia and Augusto for the wonderful cooking experience you provided for us, and the lifetime memories you have created for our grandchildren.

    We chose this cooking lab to celebrate our friend’s bachelorette party and it was a simply perfect experience. The atmosphere was warm and welcoming, just like being at home: we immediately felt comfortable. The Cesarina Catia was very kind, helpful and attentive to every detail, allowing us to live an authentic and fun evening. We also had the pleasure of meeting her daughter and husband, both really kind people, who made the experience even more familiar and enjoyable. An experience we absolutely recommend to anyone looking for something different, intimate and memorable for a special occasion!
