    The Trapezoidal Pier in Palermo is a fascinating blend of past and present. This area, reminiscent of Barcelona's Barceloneta, preserves the Castello a Mare, a symbol of the past, while embracing modernity. It is the arrival point for cruisers, tourists, and boaters arriving on our shores. During the tour, we will explore this vibrant area, purchasing fresh local ingredients. Then, we will return to my home to prepare together eggplant rolls stuffed with fresh pasta and sauce, a typical and delicious dish that embodies the authenticity of Palermo's culinary tradition.

    Me and my family really enjoyed this cooking experience. Rosa Maria was a wonderful teacher. Funny, warm and welcoming, we learned how to make Sicilian pasta from scratch, along with a Sicilian pesto and tiramisu. Rosa Maria's kitchen was big (for Italian homes) and well appointed, so we had the room and the utensils needed to make our meal. We then enjoyed the fruits of our labor in her wonderful dining room, complete with red and white wines, We could do this again in a heartbeat!

    Great pasta class. Rosa Maria is a great host and an excellent teacher of cooking. We made the pasta and sauce and then sat down together to enjoy our efforts with some lovely wine.

    Cooking with Rosa Maria was by FAR the best part of our trip! We loved getting a tour of the market and learning a but about Palermo. Rosa Maria’s house was beautiful and learning to make eggplant caponata, fresh pasta with sun-dried tomato pesto, and FRESH cannoli was amazing. Rosa Maria is so kind, knowledgeable, and a very patient teacher :)We’d love to come back with friends and we are absolutely booking with her again! Thank you, Rosa Maria!

     In Sicily, especially in Palermo, there is one true regional cuisine — based on four essential ingredients: pasta, olive oil, vegetables, and oily fish. These are the foundations of my cooking. My dishes reflect this tradition, but I love to add a touch of imagination and a desire to experiment, always staying true to the spirit of our ancient recipes. I use ingredients that are deeply connected to the land and sea of Sicily. I welcome my guests here in Palermo, but through my food, I also invite them to discover the aromas and flavors of Favignana, Ustica, and San Vito Lo Capo.
