In Sicily, especially in Palermo, there is one true regional cuisine — based on four essential ingredients: pasta, olive oil, vegetables, and oily fish. These are the foundations of my cooking.My dishes reflect this tradition, but I love to add a touch of imagination and a desire to experiment, always staying true to the spirit of our ancient recipes.I use ingredients that are deeply connected to the land and sea of Sicily. I welcome my guests here in Palermo, but through my food, I also invite them to discover the aromas and flavors of Favignana, Ustica, and San Vito Lo Capo.
