In Sicily, particularly in Palermo, there is one singular regional cuisine: pasta, olive oil, vegetables and oily fish varieties, are the four cardinal staples. The dishes prepared by Rosa Maria reflect this tradition, revised with imagination and the desire to experiment, in keeping with the ancient recipes.Our Cesarina offers dishes inextricably linked to products and raw materials of the island; Rosa Maria welcomes us in Palermo but invites us to discover the aromas and flavors of Favignana, of Ustica and of San Vito Lo Capo.

: Great market visit and cooking class together with Rosa Maria. We made delicious pasta alla Norma and pasta with ragu - and a ricotta roll for dessert. Everything was very good and I had a wonderful day together with Rosa Maria and her family.
