    In my special culinary course, I offer you the chance to learn how to make three types of fresh homemade pasta, you can choose from potato, pumpkin or spinach gnocchi, topped with a creamy parmesan or gorgonzola sauce.

    Second pasta we will make white red green noodles or tagliatelle topped with mushrooms or truffle or simply Alfredo. Finally as a third fresh pasta I propose an almond paste dessert that we will make from scratch starting with almond flour and color it green and make small cassatines, a particular Sicilian dessert with ricotta cream.

     In Sicily, especially in Palermo, there is one true regional cuisine — based on four essential ingredients: pasta, olive oil, vegetables, and oily fish. These are the foundations of my cooking. My dishes reflect this tradition, but I love to add a touch of imagination and a desire to experiment, always staying true to the spirit of our ancient recipes. I use ingredients that are deeply connected to the land and sea of Sicily. I welcome my guests here in Palermo, but through my food, I also invite them to discover the aromas and flavors of Favignana, Ustica, and San Vito Lo Capo.
