    In my special culinary course, I offer you the chance to learn how to make three types of fresh homemade pasta, you can choose from potato, pumpkin or spinach gnocchi, topped with a creamy parmesan or gorgonzola sauce.

    Second pasta we will make white red green noodles or tagliatelle topped with mushrooms or truffle or simply Alfredo. Finally as a third fresh pasta I propose an almond paste dessert that we will make from scratch starting with almond flour and color it green and make small cassatines, a particular Sicilian dessert with ricotta cream.

    We enjoyed our time, and appreciated being welcomed into Rosa’s home, and enjoyed meeting her family. Overall we had a positive experience, however it felt a bit rushed and lacked patient guidance.

    L’esperienza con Rosa Maria è stata a dir poco unica! Siamo stati accolti fin da subito da un caloroso sorriso, che ci ha accompagnati durante tutta la mattinata, partendo dalla visita del mercato, proseguendo con la preparazione dei piatti e concludendo con il pranzo. Dopo la visita iniziale, ci siamo dilettati a preparare un pranzo palermitano, guidati in modo impeccabile e delicato da Rosa Maria, che ci ha svelato tantissimi dettagli trucchi utili, in modo da poter ricreare i piatti anche a casa nostra. È stata una mattinata indimenticabile, non è mancato niente: dal buon cibo, al clima familiare, all’acqua Fiuggi, che ci è stata gentilmente offerta, dato l’agosto abbastanza caldo. Consigliamo davvero a tutti di mettere le mani in pasta insieme a Rosa Maria e di lasciarsi guidare alla scoperta dei sapori di questa magnifica terra!

    We LOVED this cooking class with Rosa - she was very friendly, welcoming & knowledgeable. She is generous with her time, patient with questions & good company. We shared lunch with her family swapping stories which was lovely - it was also my birthday so I got candles & a happy birthday song to top it all off! Would definitely recommend to others.     Our Cesarina offers dishes inextricably linked to products and raw materials of the island; Rosa Maria welcomes us in Palermo but invites us to discover the aromas and flavors of Favignana, of Ustica and of San Vito Lo Capo.
