    In my special culinary course, I offer you the chance to learn how to make three types of fresh homemade pasta, you can choose from potato, pumpkin or spinach gnocchi, topped with a creamy parmesan or gorgonzola sauce.

    Second pasta we will make white red green noodles or tagliatelle topped with mushrooms or truffle or simply Alfredo. Finally as a third fresh pasta I propose an almond paste dessert that we will make from scratch starting with almond flour and color it green and make small cassatines, a particular Sicilian dessert with ricotta cream.

    We LOVED this cooking class with Rosa - she was very friendly, welcoming & knowledgeable. She is generous with her time, patient with questions & good company. We shared lunch with her family swapping stories which was lovely - it was also my birthday so I got candles & a happy birthday song to top it all off! Would definitely recommend to others.     The pasta cooking class was a fun, very authentic experience high above the rooftops of Palermo. Rosa Maria and Celia are very friendly, the view is wonderful and the pasta is delicious.

    We had a lovely time cooking with Rosa Maria and eating dinner with her family. We were just 3 and cooked in her kitchen. We made Tiramisu and 2 types of pasta by hand. One small suggestion: while we made the pasta's and the pesto, there were other elements added to the final dishes and we weren't really involved in that. It would have been nice to be part of how it all came together. The meal itself was one of the best we had on our 2 week Italian vacation! We plan to make Pasta alla Norma this weekend at home!
