We will start by making the dough for a particular Sicilian pizza "sfincione," topped with lots of onions. We will make a fresh pasta "maccaruni ì casa " topped with pan-seared broccoli , passolini and pine nuts , saffron and toasted breadcrumbs. And for dessert a ricotta cream roll with chocolate chips .

- Perfecto afternoon! Such a wonderful and simple experience making 2 pasta recipes and a classic tiramisu. Rosa taught us hands-on (English) and sent us home with the easy-to-follow recipes for what we made. She has a beautiful home and was so welcoming to us all. I would love to come back to try the other recipes!
- We had a great time at the cooking class. We felt very welcome and the Rosa was amazing and explained everything very well. The dishes were amazing and making cannoli was very fun and interesting. We felt very welcome in her home and loved that we had the meal together with her family. I recommend this cooking class to everyone!

Cesarina from 2018Location: Palermo (PA) Languages: Italian, English, French In Sicily, especially in Palermo, there is one true regional cuisine — based on four essential ingredients: pasta, olive oil, vegetables, and oily fish. These are the foundations of my cooking. My dishes reflect this tradition, but I love to add a touch of imagination and a desire to experiment, always staying true to the spirit of our ancient recipes. I use ingredients that are deeply connected to the land and sea of Sicily. I welcome my guests here in Palermo, but through my food, I also invite them to discover the aromas and flavors of Favignana, Ustica, and San Vito Lo Capo.
