A special menu for the fall/winter season .

We will start by making the dough for a particular Sicilian pizza "sfincione," topped with lots of onions. We will make a fresh pasta "maccaruni ì casa " topped with pan-seared broccoli , passolini and pine nuts , saffron and toasted breadcrumbs. And for dessert a ricotta cream roll with chocolate chips .

This was the most perfect experience we could have had. Rosa and Sally are spectacular teachers and I enjoyed every minute of our time together. If you come to Palermo you MUST come and take this cooking class.

I wish there was a sixth star to give. Maria Rosa learned to cook in her father’s restaurant which had 2 Michelin stars and it comes through in everything, not only the food but the hospitality as well. Her friend Sally help with some English and with the cooking. You have to cook with them.
