In my kitchen you will learn how to prepare two different fresh pasta doughs to make 3 traditional pasta shapes such as busiate, cavatelli, tagliatelle or ravioli. I will reveal all my secrets for making a perfect dough, a flavoursome filling and cooking the pasta al dente! We will use traditional tools such as rolling pins, ravioli cutters and most importantly our hands, the authentic tool to 'feel' the dough!

Fresh pasta will be seasoned with a traditional sauce following seasonality. In addition to preparing the recipes you will get to learn secrets and anecdotes about the history of the dishes. At the end of the preparation you will be able to taste the dishes made with a glass of an excellent local wine.

"I was passionate about cooking and food since I was a child, accomplices grandmother who loved to cook and the whole family who loves to eat well. I like to experiment and I'm particularly passionate about pastry and leavened foods. I do research on ancient cookbooks and asking around, especially older ladies, their family recipes. Sicily, like all Italy, has an invaluable gastronomic heritage, whose recipes and preparations vary from house to house, not only between cities and provinces. This gives the palate the opportunity to enjoy the same traditional dishes with different ingredients, techniques and stories."
