    In Sicily there are also local versions of pizza and focaccia that differ from the regular neapolitan-style pizza in both the dough and the toppings, from one province to another.

    In this cooking class you will learn all the secrets to prep a delicious focaccia Messinese. This is a typical baked product from the province of Messina, the city in the Strait, characterized by a thin, crispy dough and topped with Italian curly escarole, tuma sheep cheese, cherry tomatoes and salted anchovies. I will share with you the recipe I learned from my partner's family coming from Messina, a real treat! At the end of the preparation you will taste the focaccia together with a glass of wine or with ice cold beer as tradition dictates.

    Such an enjoyable experience! My mother & I chose this class as we really wanted to learn authentic pasta making and tiramisu. Alice and Francesco were a joy to be taught & hosted by. So knowledgeable and skilled. They made the session so enjoyable and easy to follow. Lunch was then had to enjoy our labor of love, with lots of laughter and great chats. We highly recommend and will be back again. Thank you

    We took a cooking class with Alice and Francesco during our stay in Palermo, and it was the absolute highlight of our trip. They were incredibly warm and welcoming hosts, as well as patient, knowledgeable teachers who made the experience both fun and memorable. The food we prepared together ended up being one of our favorite meals of the entire trip, and we’re excited to recreate the dishes when we get home. If you’re looking to learn authentic Sicilian cooking while spending time with genuinely wonderful people, I can’t recommend their class highly enough. It was a 10/10 experience and a memory we’ll always cherish!

    We can definitely recommend this cooking class to everyone! We had a really great evening with Alice and Francesco. Alice showed us many different types/shapes of pasta and shared really helpful tips and background information for the making of pasta. We also prepared a delicious tiramisu. As a vegetarian it was no problem at all and Alice checked our likes/dislikes with us in advance. After we made the pasta Alice and Francesco cooked for us as we had really nice starters and wine. The food was delicious. We had a lot of fun, shared great laughter and had a really nice and delicious dinner and local recommendations for our trip in Sicily. If we ever visit Palermo again we will come back for another cooking experience with Alice.

    We had such a fantastic time at this cooking class with Alice and Francesco! From the moment we arrived, they made us feel so welcome in their beautiful home. The whole experience was warm, relaxed, and so much fun – full of laughter, great conversation, and of course incredible food. Alice is a wonderful teacher, making everything easy to follow while still feeling authentic and special. We absolutely loved learning how to make fresh pasta and the delicious almond parfait – such a treat! It was definitely a highlight of our trip to Sicily. It truly felt like spending an evening with friends rather than just a class. We left with amazing memories (and delicious recipes to try at home!). I would highly, highly recommend this experience to anyone visiting – it’s an absolute must!

    I was passionate about cooking and food since I was a child, accomplices grandmother who loved to cook and the whole family who loves to eat well. I therefore decided to pursue a university career in the field of gastronomy. I have faced a multidisciplinary and holistic path that has treated the world of food at 360 o'clock. I love cooking for my family and for others, starting from the choice of recipes and the selection of ingredients. I like to experiment and I'm particularly passionate about pastry and leavened foods. I do research on ancient cookbooks and asking around, especially older ladies, their family recipes. Sicily, like all Italy, has an invaluable gastronomic heritage, whose recipes and preparations vary from house to house, not only between cities and provinces. This gives the palate the opportunity to enjoy the same traditional dishes with different ingredients, techniques and stories.
