In my kitchen you will learn how to prepare two different fresh pasta doughs to make two traditional pasta shapes. I will reveal all my secrets for making perfect dough, flavorful filling and cooking the pasta al dente! We will use traditional tools such as rolling pin, ravioli cutter and most importantly our hands, the essential tool to feel the dough! In addition, we will prepare the classic tiramisu, the quintessential Italian dessert, a creamy spoon dessert whose coffee sauce will be flavored with marsala wine. In addition to preparing the recipes you will get to learn secrets and anecdotes about the history of the dishes. At the end of the preparation you will be able to taste the dishes made, accompanying them with an excellent local wine.

I like to experiment and I'm particularly passionate about pastry and leavened foods. I do research on ancient cookbooks and asking around, especially older ladies, their family recipes. Sicily, like all Italy, has an invaluable gastronomic heritage, whose recipes and preparations vary from house to house, not only between cities and provinces. This gives the palate the opportunity to enjoy the same traditional dishes with different ingredients, techniques and stories."
