Together, we will engage in the preparation of two types of fresh pasta: one stuffed and the other unfilled.

The first creation will be green tortelloni stuffed with a delicious ricotta or succulent squash, while the second dish will see the making of busiate (a type of Sicilian macaroni) alla norma, an iconic Sicilian fresh pasta carefully rolled around a skewer. Last but certainly of paramount importance, we will engage in the preparation of an authentic tiramisu, following the original recipe handed down in my family from generation to generation.

It was a very nice experience, Rosa Maria had beautiful and overall clean apartment where she learned us how to make the pasta. We had some fun and the result was delicious.

Me and my family really enjoyed this cooking experience. Rosa Maria was a wonderful teacher. Funny, warm and welcoming, we learned how to make Sicilian pasta from scratch, along with a Sicilian pesto and tiramisu. Rosa Maria's kitchen was big (for Italian homes) and well appointed, so we had the room and the utensils needed to make our meal. We then enjoyed the fruits of our labor in her wonderful dining room, complete with red and white wines, We could do this again in a heartbeat!

 In Sicily, especially in Palermo, there is one true regional cuisine — based on four essential ingredients: pasta, olive oil, vegetables, and oily fish. These are the foundations of my cooking. My dishes reflect this tradition, but I love to add a touch of imagination and a desire to experiment, always staying true to the spirit of our ancient recipes. I use ingredients that are deeply connected to the land and sea of Sicily. I welcome my guests here in Palermo, but through my food, I also invite them to discover the aromas and flavors of Favignana, Ustica, and San Vito Lo Capo.
