I will take you on a journey through the heart of Palermo, following in the footsteps of The Leopard, visiting the iconic locations from the series: from the majestic Quattro Canti to the evocative Piazza Pretoria, and the beautiful Church of Santa Caterina d’Alessandria.
After the tour, we will head to the kitchen to prepare the legendary Timballo del Gattopardo: a refined shortcrust pastry shell enclosing a heart of bucatini pasta, wrapped in a béchamel sauce delicately enriched with beef jus, dried and fresh porcini mushrooms, and thin strips of cooked ham.
To end on a sweet note, we will make a mandarin or orange jelly, just like the one enjoyed by the prince immediately after the timballo in the series.

- The pasta cooking class was a fun, very authentic experience high above the rooftops of Palermo. Rosa Maria and Celia are very friendly, the view is wonderful and the pasta is delicious.
- We had a lovely time cooking with Rosa Maria and eating dinner with her family. We were just 3 and cooked in her kitchen. We made Tiramisu and 2 types of pasta by hand. One small suggestion: while we made the pasta's and the pesto, there were other elements added to the final dishes and we weren't really involved in that. It would have been nice to be part of how it all came together. The meal itself was one of the best we had on our 2 week Italian vacation! We plan to make Pasta alla Norma this weekend at home!
- We had an excellent cooking class with Rosa Maria Ingram at her home. After visiting the market, we helped cook a wonderful lunch including caponata, homemade cavatelli pasta with eggplant and zucchini, and a dark chocolate cake with ricotta cream. We learned some great tips, received the recipes and ate a delicious lunch. Rosa Maria was a great teacher and cook and even changed the menu to a chocolate dessert to accommodate our tastes. We highly recommend Rosa Maria Ingrao in Palermo, Sicily.
