I will take you on a journey through the heart of Palermo, following in the footsteps of The Leopard, visiting the iconic locations from the series: from the majestic Quattro Canti to the evocative Piazza Pretoria, and the beautiful Church of Santa Caterina d’Alessandria.
After the tour, we will head to the kitchen to prepare the legendary Timballo del Gattopardo: a refined shortcrust pastry shell enclosing a heart of bucatini pasta, wrapped in a béchamel sauce delicately enriched with beef jus, dried and fresh porcini mushrooms, and thin strips of cooked ham.
To end on a sweet note, we will make a mandarin or orange jelly, just like the one enjoyed by the prince immediately after the timballo in the series.

- Our cooking class with Rosa Maria was the absolute highlight of our trip to Italy. From the moment we arrived, she and her husband welcomed us into their home with such warmth and kindness that we immediately felt like part of their family. The experience was more than just a cooking lesson—it was an immersion into Sicilian culture, tradition, and hospitality. Rosa Maria is a wonderful teacher—patient, engaging, and full of joy. She guided us step by step through making fresh pasta, sharing tips and family traditions along the way. We laughed, we learned, and we had so much fun working together in the kitchen. Sitting down afterward to enjoy the meal we created together was an unforgettable moment. The food was incredible—honestly the best we had in Palermo—and it tasted even better knowing we had made it ourselves. This experience gave us more than recipes; it gave us lasting memories and a new family tradition we’ll continue back home. We can’t wait to cook Rosa Maria’s pasta again and share the story of this day with our own loved ones. Siamo stati accolti fin da subito da un caloroso sorriso, che ci ha accompagnati durante tutta la mattinata, partendo dalla visita del mercato, proseguendo con la preparazione dei piatti e concludendo con il pranzo. Dopo la visita iniziale, ci siamo dilettati a preparare un pranzo palermitano, guidati in modo impeccabile e delicato da Rosa Maria, che ci ha svelato tantissimi dettagli trucchi utili, in modo da poter ricreare i piatti anche a casa nostra. È stata una mattinata indimenticabile, non è mancato niente: dal buon cibo, al clima familiare, all’acqua Fiuggi, che ci è stata gentilmente offerta, dato l’agosto abbastanza caldo. Consigliamo davvero a tutti di mettere le mani in pasta insieme a Rosa Maria e di lasciarsi guidare alla scoperta dei sapori di questa magnifica terra!

Cesarina from 2018Location: Palermo Languages: Italian, English, French In Sicily, especially in Palermo, there is one true regional cuisine — based on four essential ingredients: pasta, olive oil, vegetables, and oily fish. These are the foundations of my cooking. My dishes reflect this tradition, but I love to add a touch of imagination and a desire to experiment, always staying true to the spirit of our ancient recipes. I use ingredients that are deeply connected to the land and sea of Sicily. I welcome my guests here in Palermo, but through my food, I also invite them to discover the aromas and flavors of Favignana, Ustica, and San Vito Lo Capo.
