We will prepare a vegan dough by mixing flour and water, with the option of adding spinach and basil for a green hue, or beet for a vibrant red. The filling will be made from seasonal vegetables such as eggplant, artichokes, squash and potatoes, for a tasty and wholesome result. We will have fun creating ravioli of various shapes, from the classic tortellone to round ones, and with the same pasta we will make tagliatelle, tagliolini and fettuccine, topped with a fragrant pesto of oranges, pine nuts, basil, mint and fried eggplant. All accompanied by a toast with an excellent Italian prosecco and a typical appetizer: the Sicilian sfincione.

Me and my family really enjoyed this cooking experience. Rosa Maria was a wonderful teacher. Funny, warm and welcoming, we learned how to make Sicilian pasta from scratch, along with a Sicilian pesto and tiramisu. Rosa Maria's kitchen was big (for Italian homes) and well appointed, so we had the room and the utensils needed to make our meal. We then enjoyed the fruits of our labor in her wonderful dining room, complete with red and white wines, We could do this again in a heartbeat!

 In Sicily, especially in Palermo, there is one true regional cuisine — based on four essential ingredients: pasta, olive oil, vegetables, and oily fish. These are the foundations of my cooking. My dishes reflect this tradition, but I love to add a touch of imagination and a desire to experiment, always staying true to the spirit of our ancient recipes. I use ingredients that are deeply connected to the land and sea of Sicily. I welcome my guests here in Palermo, but through my food, I also invite them to discover the aromas and flavors of Favignana, Ustica, and San Vito Lo Capo.
