  • Sfince (Sicilian Ricotta-filled fried pastries)

Sfince are soft and airy fritters typical of Palermo, fried and filled with ricotta cream, chocolate chips, and orange zest. Their name comes from Arabic and means "sponge." They are traditionally prepared for Father's Day, but they are so delicious that they can be found in Palermo's pastry shops from November to May. I will pair this delicacy with a Moscato dell'Etna, a sweet passito wine with fruity notes and a slight minerality.

Oh my goodness such fun!! RosaMaria was amazing and I actually made fresh pasta! I would highly recommend this experience to everyone. Eating with her and her family was the best end to a great trip around Sicily!!

Rosa Maria was an absolute delight. My husband and I thoroughly enjoyed our time with her. I’m not exactly skilled in the kitchen, but she helped me and we prepared a pasta I can actually make at home. It was a lovely afternoon with her and her husband and the nanny of their children. Would recommend to anyone looking for an authentic Sicilian dining experience.

Rosa Maria and her daughter were wonderful! We had a group of 14, and everything was ready when we arrived. We learned to make two types of pasta and tiramisu. We then shared our meal together. I highly recommend!

 In Sicily, especially in Palermo, there is one true regional cuisine — based on four essential ingredients: pasta, olive oil, vegetables, and oily fish. These are the foundations of my cooking. My dishes reflect this tradition, but I love to add a touch of imagination and a desire to experiment, always staying true to the spirit of our ancient recipes. I use ingredients that are deeply connected to the land and sea of Sicily. I welcome my guests here in Palermo, but through my food, I also invite them to discover the aromas and flavors of Favignana, Ustica, and San Vito Lo Capo.
