    For Sunday lunch, I invite you to enjoy an authentic menu typical of my region, consisting of a first course, second course and dessert;

    To begin with a timballo del Gattopardo with bucatini pasta served with mushroom sauce, cooked ham wrapped in a light puff pastry . For the second course we will prepare meat rolls with parmesan cheese and auricchio, mashed in oil and breadcrumbs. For dessert we will make Genovesi Ericine, typical Erice sweets: short pastry filled with a custard, baked in the oven.

    We had an excellent time with Rosa Maria and her assistant - they are charming and fun. I cannot recommend them highly enough. From start to finish it was interesting and informative, and Rosa Maria is an absolute delight. She taught us how to make pasta from scratch in her beautiful apartment, which has a most modern and spacious kitchen. The resulting eggplant dish and tiramisu desert were incredible. I've made Pasta Norma about 100 times before but now I know how to make it properly Grazie Rosa Maria! We look forward to a return visit!

    Our Cesarina offers dishes inextricably linked to products and raw materials of the island; Rosa Maria welcomes us in Palermo but invites us to discover the aromas and flavors of Favignana, of Ustica and of San Vito Lo Capo.
