    For Sunday lunch, I invite you to enjoy an authentic menu typical of my region, consisting of a first course, second course and dessert;

    To begin with a timballo del Gattopardo with bucatini pasta served with mushroom sauce, cooked ham wrapped in a light puff pastry . For the second course we will prepare meat rolls with parmesan cheese and auricchio, mashed in oil and breadcrumbs. For dessert we will make Genovesi Ericine, typical Erice sweets: short pastry filled with a custard, baked in the oven.

    We came with high expectations, and Rosa Maria and Sally far exceeded them. The recipes are simple but elegant. The instruction was delightful. And the resulting food was delicious. I highly recommend experiencing this class.

    I wish there was a sixth star to give. Maria Rosa learned to cook in her father’s restaurant which had 2 Michelin stars and it comes through in everything, not only the food but the hospitality as well. Her friend Sally help with some English and with the cooking. You have to cook with them.

    I really liked Rosa Maria. he explained everything to us very nicely and patiently.     Our Cesarina offers dishes inextricably linked to products and raw materials of the island; Rosa Maria welcomes us in Palermo but invites us to discover the aromas and flavors of Favignana, of Ustica and of San Vito Lo Capo.
