I was barely taller than the kitchen table when, as a child, I delighted in watching, a curious spectator, as my mother and aunt busily worked at the stove, preparing traditional local dishes for lunch or dinner. Gradually, that routine of simple, loving gestures and the careful selection of genuine ingredients, which turned into familiar flavors on the plate, became the fundamental ingredients of my own cooking today. I'm a gourmet at heart, and I love cooking for my family, friends, and, in the spirit of hospitality, I also enjoy dedicating time to travelers who, on their journey through Italy, not only explore Puglia and Lecce—its Baroque art, ancient architecture, historic palaces, and the sea—but also wish to savor a bit of our Apulian culinary tradition. For them, I love to prepare sagne 'ncannulate, legumes and meat cooked in a clay pot, homemade pasta with local herbs, savory vegetable pies, and almond pastries.

Giuseppa was amazing! We felt very welcomed, and loved chatting with her during our class. We learned so much a made a lot of different foods during the experience. At the end we felt like family. Highly recommend!

Giuseppa warmly welcomed us into her home in Gallipoli with delicious freshly prepared focaccine, immediately making us feel like part of the family. She then guided us through the art of making traditional orecchiette and spinach tagliatelle, sharing fascinating stories about the history of the ingredients and their connection to life in Puglia. Along the way, she prepared a wholesome tomato sauce to accompany the pasta we had made, which we later enjoyed together over a delightful lunch. To finish, Giuseppa treated us to a wonderful homemade tiramisu, accompanied by even more personal anecdotes and local insights. If you truly want to experience the authentic flavours, traditions, and hospitality of Puglia, I highly recommend taking a cooking class with Giuseppa and the Cesarine community. It was much more than a cooking lesson, it was a memorable cultural experience.

My wife and I attended the parmigiana di melanzane and pizzi leccese course with Josie in her Lecce home. It was a fantastic experience. Josie is very friendly and informative and the Pizzi Leccese was something completely new to us. All of the ingredients used were organic and the flour we used is of an ancient origin (Senatore Capelli Semola). I would highly recommend this course as it was a unique offering which gave us a deeper look into the local cuisine past the usual orchietti pasta. 5 stars!!! Grazie per tutti Josie!!!
