    Immaculate Conception in Apulia marks the beginning of Christmas celebrations and long family meals. In my home, an ancient masseria, you will be welcomed by a warm atmosphere, with the kitchen evoking ancient scents. The menu I will offer you combines the traditions of Christmas Eve and lunch, alternating between fish and meat dishes. You will taste tarallo dell'Immacolata with cured meats and cheeses, fava bean puree with baby octopus, wild chicory timbale, sagne incannulate with salt cod, smoked bombette, and tagliolini pie with mushrooms. The lunch will close with pettole, honey purcidd and roasted chestnuts.

    A very warm welcome- gluten free intolerance was no problem. We did the gluten free version and my husband the normal version. All items that we needed were prepared for us and a feast to share when we finished the cooking class. A wonderful experience that I would highly recommend!     My cooking is the result of a family passion passed down from my mother, my grandmother, and shaped by the experiences and places that have been part of my life. I love cooking with seasonal, local products, and whenever possible, ingredients from my own garden. I enjoy growing and using aromatic herbs, transforming fruit into unique and healthy jams, as well as creating traditional liqueurs. My cuisine is typical of the Kingdom of the Two Sicilies, as a Neapolitan transplanted to Puglia, with Sicilian and Campanian grandmothers and a Pugliese mother-in-law. I love French cuisine and exploring “fusion” experiences that blend Southern Italian and international flavors.
