    Puglia at the Table: Focaccia, Orecchiette and Almond Cakes.

    The intent of this cooking class is to give you a taste of Puglia with 3 must-haves of Apulian cuisine: fragrant focaccia with tomatoes , oregano, olives and onion; handmade orecchiette pasta made with Semola coming from ancient grains and topped with garden tomatoes and turnips; and finally the fantastic Apulian almonds in small, simple and fragrant sweets. These dishes speak for themselves of the simplicity and authenticity of Apulian cuisine suitable for all palates and even for vegans and vegetarians! I am waiting for you we will have fun while I tell you many anecdotes about our land.

    A very warm welcome- gluten free intolerance was no problem. We did the gluten free version and my husband the normal version. All items that we needed were prepared for us and a feast to share when we finished the cooking class. A wonderful experience that I would highly recommend!     My cooking is the result of a family passion passed down from my mother, my grandmother, and shaped by the experiences and places that have been part of my life. I love cooking with seasonal, local products, and whenever possible, ingredients from my own garden. I enjoy growing and using aromatic herbs, transforming fruit into unique and healthy jams, as well as creating traditional liqueurs. My cuisine is typical of the Kingdom of the Two Sicilies, as a Neapolitan transplanted to Puglia, with Sicilian and Campanian grandmothers and a Pugliese mother-in-law. I love French cuisine and exploring “fusion” experiences that blend Southern Italian and international flavors.
