Handmade orecchiette represent the most authentic tradition of Puglia; they are the most beloved fresh pasta of my region. Their art has been handed down for generations, offering endless possibilities of combinations with delicious condiments. Together we will learn the ancient technique for making them: we will form small cylinders and, with skill and a cutting board, turn those cylinders into little ears, just as tradition dictates. This experience will be accompanied by an excellent local primitive wine to make the moment even more special.
