My focus has always been on authentic, high-quality ingredients, carefully selected for mindful cooking. During the cookery class, we will prepare dishes together using organic and locally sourced ingredients, creating a sustainable menu that showcases the work of small local producers. The menu draws inspiration from traditional Parmesan cuisine and family recipes: simple, authentic dishes that tell the story of the region and its culinary culture. I know many of the producers I source from personally: a direct connection that allows me to understand the value of good food, its journey, and the impact it has on those who produce it. The menu can be adapted for vegetarians: please let us know when booking.

Cesarina from 2025Location: Parma (PR) Languages: Italian, English, FrenchI learned to cook from my grandmother, and later I grew to experiment with dishes and techniques from all over the world. Being Ligurian by origin, my cooking highlights vegetables in many forms: from herb pies to stuffed dishes, up to the ever-present focaccia. Here in Emilia, I honed the art of fresh pasta and learned to appreciate braised dishes, perfect for warming up winter days.
