Pizza, focaccia & torta al testo: flavors of Umbria

Hands-On Cooking Class: Shared cooking class on pizza and focaccia, followed by a tasting of the dishes prepared during the lesson. The class will begin with a tasting of local products.

I’m happy to invite you to discover the secrets of pizza and torta al testo at my cooking school, located in the heart of Assisi's historic center. It’s a unique experience where I’ll guide you through the preparation of traditional Umbrian dishes in a warm and convivial setting. We’ll begin with a welcome aperitif, where you’ll taste local products that will introduce you to the flavors of Umbria.

I’ll teach you how to prepare three different types of pizza: the soft, fluffy pizza alta, the crispy pizza normale, and the traditional torta al testo, a typical Umbrian specialty similar to focaccia, cooked on a stone called "testo."
