We will make and taste the true, only, unique and inimitable Cacciucco alla Livornese. The recipe will be rooted in the history of this dish and its nature as a poor dish without any variation typical of the increasingly gentrified cuisines offered in restaurants will be respected. We will read together a few pages of the history of this dish and enjoy its aromas from its preparation. We will accompany the cacciucco by the inevitable red wine and close the meal with a typical coffee spiked with Leghorn correction rum. We will eat in the dining area of my kitchen, surrounded by contemporary artwork, located in a wonderful Tuscan country cottage surrounded by greenery.

"I have loved cooking and good food for a very long time; I like to look for quality and niche products with which I create simple dishes to enhance them to the maximum. I don't like too many artifices in the kitchen: I love beauty, even in the dish, but always with respect for the excellent raw material that I choose from highly trusted shopkeepers. I live in a beautiful country house occupying the ground floor, surrounded by greenery and nature a few kilometers from the town center (very small anyway); on summer evenings I like to dine al fresco surrounded by greenery and the song of crickets".
