After visiting the beach adjacent to my home, I'll offer my guests dishes that sensorially complement the visual experience of the sea. To start, we'll have octopus "murato" drowned in a creamy tomato and olive sauce; followed by linguine with scampi and scabbardfish rolls coated in aromatic herbs, nestled on a bed of anchovy spinach. To finish, a delicious lemon delight.

In the cozy open space of my home, I receive my guests to immerse them in the heady flavors and aromas of my land: Sicily. We will begin with a platter of local cured meats and cheeses and a special caponata and then continue with tricolor pizzelle (made with long leavened dough). We will finish with a sumptuous cheesecake prepared with ricotta from Piana degli Albanesi and garnished with a succulent strawberry sauce.

We will enjoy the legendary panelle, my very own buttery arancine, "u pani cunzato" stuffed with anchovies, red dates, a sprinkling of oregano and a primosale with peppercorns; and finally, to end on a sweet note, cassatelle di Castellamare: sweet ravioli filled with a delicate ricotta cream with drops of dark Modican chocolate.

In this cooking class, held on my beautiful terrace, we'll cook two types of fresh pasta: busiate, a typical Sicilian pasta (a sorto of long macaroni) and topped with tomato sauce, fried eggplant, and salted ricotta; and green tortelloni filled with pumpkin or eggplant and dressed with butter and sage. We'll finish with tiramisu, a classic Italian dessert, prepared with coffee-soaked ladyfingers and mascarpone cheese, and served in small cups.

The menu includes: Busiate alla Norma, green tortelloni, and tiramisu.We'll make a typical Sicilian pasta from semolina flour and water, twisted around a rod called "busiate". We'll dress it with fresh tomato sauce, fried eggplants, and salted ricotta. The tortelloni will be green as they're made with spinach dough, filled with either ricotta, pumpkin, or eggplant depending on the season, and finally garnished with butter and sage. To conclude, we'll serve the classic tiramisu with coffee in colorful disposable cups.

Then you'll taste the Vastedda (typical soft bread) with ricotta cheese and we conclude with the sfincia (dessert with Bagheria ricotta cream).

The apartment is located in the historic center, on the main street that connects the cathedral to 3 of the many 18th-century villas. From here, we will drive to the oldest bakery with a wood-fired oven since 1830 where I will buy bread and the typical specialty "lo sfincione bagherese." From here by car we will reach Aspra, the seaside hamlet of Bagheria, there we will enjoy the seafront street food par excellence: bread and panelle, crocchè and "meusa." After admiring the coast, we will return to the center where we will have lunch tasting my eggplant caponata ( a handed down recipe), anelletti al forno a typical pasta format topped with meat sauce, peas and stringy mozzarella, meat rolls with "muddica cunzata," and the famous homemade cannolo, made with ricotta cream at Km 0.
