    Christmas is just around the corner, I would like to recreate an atmosphere of joy and excitement that accompanied the preparations of symbolic dishes: cappelletti, black crostini, almond torciglione.

    When you would meet someone and immediately ask, "Did you make cappelletti? How did they turn out? Do you put a squeeze of lemon on it? So you would mix customs, traditions and strengthen the celebration, it was not a competition, it was sharing! I propose the making of these recipes in front of the fireplace, amid chatter and music, at the end we can taste and why not, repeat at home doing better and better.

    My favorite dishes are those made with long-fermentation doughs. One of my specialties is the Easter cheese bread, infused with the warm and inviting aromas of cinnamon and cloves. All my pasta is handmade, paired with simple yet flavorful sauces, such as *aglione* and white Chianina ragù. For desserts, I often prepare zuppa inglese, made with the traditional Umbrian torcolo soaked in alchermes, and salame del re, two delightful classics of Italian tradition.
