Food and Poetry: The experience I propose combines tasting typical dishes from Umbria with listening to and discussing texts from Italian and Latin literature, along with the presentation of great figures and works of art. The conversation will also be enriched by musical pieces.

The menu will follow a common theme: simple dishes from popular tradition, with special attention to doughs (long-fermented focaccias, torta al testo, cheese cake), served with the finest cured meats and vegetables. The first courses will feature handmade pasta (pici, lasagna, or other types) with aglione, Chianina ragù, or wild boar. Desserts, prepared according to family tradition, will include salame del re, zuppa inglese, and wine cookies.

My favorite dishes are those made with long-fermentation doughs. One of my specialties is the Easter cheese bread, infused with the warm and inviting aromas of cinnamon and cloves. All my pasta is handmade, paired with simple yet flavorful sauces, such as *aglione* and white Chianina ragù. For desserts, I often prepare zuppa inglese, made with the traditional Umbrian torcolo soaked in alchermes, and salame del re, two delightful classics of Italian tradition.
