The proposed menu celebrates Umbrian tradition, reinterpreted with a modern twist and the use of innovative techniques, such as long rising doughs. We will begin with typical appetizers: black meat crostini and assorted focaccia accompanied by local cured meats and cheeses. This will be followed by cappelletti in meat broth, a signature dish of Umbrian conviviality. We will continue with herb-scented tomato lentils served with sausage. To conclude, the traditional torciglione and a refined tiramisu. All will be accompanied by wines selected from the best wineries in the area. The atmosphere, with attention to detail, will encourage conversation and relaxation, offering guests an authentic and welcoming experience.

My favorite dishes are those made with long-fermentation doughs. One of my specialties is the Easter cheese bread, infused with the warm and inviting aromas of cinnamon and cloves. All my pasta is handmade, paired with simple yet flavorful sauces, such as *aglione* and white Chianina ragù. For desserts, I often prepare zuppa inglese, made with the traditional Umbrian torcolo soaked in alchermes, and salame del re, two delightful classics of Italian tradition.
