A unique experience just before Carnival, featuring traditional dishes and stories of exploits, heroes, masks, and tales for all ages. The menu follows local tradition, with cakes, focaccia, pappa al pomodoro, legumes, and homemade pasta with vegetarian sauces such as aglione or meat sauces such as Chianina ragù, ending with Strufoli with honey (or alternatively with Alchermes). Each course is accompanied by selected wines from the best wineries in the area, for a journey through authentic flavors, history, and culture.

My favorite dishes are those made with long-fermentation doughs. One of my specialties is the Easter cheese bread, infused with the warm and inviting aromas of cinnamon and cloves. All my pasta is handmade, paired with simple yet flavorful sauces, such as *aglione* and white Chianina ragù. For desserts, I often prepare zuppa inglese, made with the traditional Umbrian torcolo soaked in alchermes, and salame del re, two delightful classics of Italian tradition.
