    Discover authentic Umbrian cuisine with the preparation of ricotta and spinach ravioli and a delicious zuppa inglese with cream. The experience is fun, easy and suitable for everyone, ideal for those who want to learn the secrets of traditional cooking. We will start by making the pastry, cooking the spinach and preparing the filling. Then, we will cut the dough into rectangles and, using a stencil, create small disks to be stuffed and sealed, ready for cooking. The ravioli can be topped with butter and sage or tomato and basil. For dessert, we will prepare zuppa inglese: a typical dessert of the Umbrian countryside, made with layers of torcolo soaked in alchermes and coffee, topped with lemon or black cherry cream. A tasty and traditional experience!

    My favorite dishes are those made with long-fermentation doughs. One of my specialties is the Easter cheese bread, infused with the warm and inviting aromas of cinnamon and cloves. All my pasta is handmade, paired with simple yet flavorful sauces, such as *aglione* and white Chianina ragù. For desserts, I often prepare zuppa inglese, made with the traditional Umbrian torcolo soaked in alchermes, and salame del re, two delightful classics of Italian tradition.
