    The dinner celebrates the tradition of wood-fired meat: sausages, veal or pork steaks, and the classic “scottadito” lamb, all seasoned with Umbrian extra virgin olive oil and fresh herbs like rosemary, sage, and bay leaves.

    The meal begins with warm focaccia as an appetizer, followed by a generous selection of grilled meats accompanied by seasonal vegetables. Everything is served with homemade bread or the traditional Umbrian torta al testo, fresh off the griddle and fragrant.

    To finish, a sweet ending with a choice between two beloved desserts: classic tiramisù or salame del re with sour cherry cream — a delicious and genuine final touch.

    When possible, the experience takes place outdoors, in a garden nestled in the green Umbrian hills, with a stunning view of Lake Trasimeno.

    My favorite dishes are those made with long-fermentation doughs. One of my specialties is the Easter cheese bread, infused with the warm and inviting aromas of cinnamon and cloves. All my pasta is handmade, paired with simple yet flavorful sauces, such as *aglione* and white Chianina ragù. For desserts, I often prepare zuppa inglese, made with the traditional Umbrian torcolo soaked in alchermes, and salame del re, two delightful classics of Italian tradition.
