    Umbrian Carnival Strufoli: making them is a satisfying and enjoyable experience, perfect for sharing with friends. Although the process is time-consuming, it is simple and addictive. The ingredients are mixed until the dough is soft, slightly sticky and fragrant. After resting, slow frying takes place, cooking a few pieces at a time for a perfect result. Finally, strufoli are enriched with warm honey or alkermes for an irresistible finishing touch.

    My favorite dishes are those made with long-fermentation doughs. One of my specialties is the Easter cheese bread, infused with the warm and inviting aromas of cinnamon and cloves. All my pasta is handmade, paired with simple yet flavorful sauces, such as *aglione* and white Chianina ragù. For desserts, I often prepare zuppa inglese, made with the traditional Umbrian torcolo soaked in alchermes, and salame del re, two delightful classics of Italian tradition.
