Umbrian Carnival strufoli: join our cooking class and discover the pleasure of making them with your own hands! Making strufoli is a rewarding and enjoyable experience, perfect for sharing with friends. Although it takes a little time, the process is simple and engaging: the ingredients are mixed until you obtain a soft, slightly sticky, and fragrant dough. After resting, we will slowly fry them together, cooking a few pieces at a time for perfect results. Finally, we will decorate the strufoli with warm honey or Alchermes, adding the finishing touch that makes them irresistible.

My favorite dishes are those made with long-fermentation doughs. One of my specialties is the Easter cheese bread, infused with the warm and inviting aromas of cinnamon and cloves. All my pasta is handmade, paired with simple yet flavorful sauces, such as *aglione* and white Chianina ragù. For desserts, I often prepare zuppa inglese, made with the traditional Umbrian torcolo soaked in alchermes, and salame del re, two delightful classics of Italian tradition.
