I look forward to welcoming you to my cooking school, located in the heart of Assisi’s historic center. Here, among the charming streets of the city, I will guide you through an authentic and convivial culinary experience.
We will start with a welcome aperitif, then it’s time to get hands-on! I will teach you how to prepare an Italian classic: fettuccine. I will reveal the secrets of handmade pasta, from choosing the right ingredients to mastering the perfect technique for a smooth and elastic dough. After the class, we will enjoy together the dish we have prepared, along with local products that I will introduce to you. It is an experience full of flavor, fun, and togetherness, perfect for those who want to discover the true spirit of traditional Italian home cooking.

- It’s 10:00 AM and I am in Assisi, in front of Eleonora’s cooking school when I hear: - Good morning! It’s Eleonora who welcomes me with a warm smile. I respond with a good morning and specify that I am Italian and don’t know how to make pasta by hand. Smiling, she reassures me and invites me to a tasting of local cured meats, cheeses, oil and wine at the Wine Store located in front of the school. It’s a pleasant moment where I get to savor authentic delicacies and where I meet my classmates: three very nice Norwegian girls. But it’s time to get our hands dirty! Work surface and rolling pin await us; Eleonora, in a white smock, takes on her role while we, each with an apron with the words "Cesarine" and a chef's hat, listen carefully to her instructions. Finally, here’s our first sheet of pasta and, with exclamations of amazement, we make fettuccine, but the greatest enthusiasm comes with the ravioli that look like the work of a master pasta maker. We have so much fun! The experience isn't over: we have to taste the ravioli. Eleonora has set the table just like for a family lunch and after toasting with “Skal” we savor the fruits of our labor. Thank you from the bottom of my heart, dear Eleonora, for the welcome you gave us and the passion you transmitted to us. I will carry in my heart the memory of this unforgettable day but I would like to conclude with a sentence from the story: "Babette’s Feast". "Happiness can consist of giving everything you have, in an exchange of mutual pleasure that involves both the senses and the spirit."
