An ancient 1850 farmhouse nestled among olive trees, a short distance from Cisternino. My course focuses on the authentic cuisine of the Itria Valley, a peasant kitchen based on the secrets of grandmothers who could create magical dishes from simple, everyday ingredients. Being a local cuisine, the farmers used ingredients they could find daily at zero kilometers, such as eggs, bread, semolina, vegetables, and cheese. Our menu is vegetarian and composed as follows: appetizer with local products (olives, taralli, vegetables, mozzarella, etc.), handmade orecchiette pasta that we will prepare together, "polpette dei poveri" (meatballs made of bread, eggs, and cheese), Sporcamuss (a dessert of puff pastry and custard) or another typical local sweet.

We had a wonderful time at Michele’s estate. We learned to make focaccia and delicious orecchiette in a beautiful setting. The lunch we were served was amazing and we felt welcomed and at home. What a wonderful experience, thank you Michele.
