Simona and I, mothers and children originally from Palermo, will take you on a journey to discover fresh pasta, guiding you through the preparation of busiate, a typical Sicilian pasta that you can enhance with the classic Norma sauce or with tasty seasonal vegetables. Next, we’ll move on to potato gnocchi, soft and irresistible, to be enjoyed with a delicious tomato sauce or a creamy Gorgonzola fondue. And to finish on a sweet note, we’ll make a ricotta roll together: a light sponge cake wrapped in a velvety ricotta cream and enriched with delicious dark chocolate chips. An experience of flavour and tradition not to be missed!

We had such a wonderful experience with Rosa Maria. She was so friendly and welcoming, we learned how to make 2 types of homemade pasta and sauce as well as parfait. I can’t wait to go home and make everything for my friends! I highly recommend her class! Not to be missed!

Since 2018, I have been a Cesarina in Palermo, and because my children live in Milan, I decided to open my home there as well, along with my daughter Simona. Simona and I share a passion for cooking, and together we will prepare traditional dishes from our home region of Sicily, such as *busiate* and *cavatelli*, as well as Lombard dishes like pumpkin tortelli and tagliatelle with seasonal ingredients. We will also make Sicilian desserts based on ricotta, such as cannoli and cassata, and a unique version of tiramisù, passed down to us by a chef friend from Treviso, the birthplace of this recipe.
