We look forward to welcoming you to our home to learn the basics and fundamentals of fresh pasta, from the perfect dough to closing stuffed pasta, all the way to hand-cut tagliatelle. You will discover fillings and sauces following our gentle approach to cooking.

We will knead the dough by hand and explore tips and tricks to achieve an elastic, well-worked pasta sheet. We will prepare the filling and sauce for the tagliatelle together, learn how to distribute the fillings, and explore different techniques for closing various types of ravioli. We will make hand-cut tagliatelle, just like in tradition.

Finally, we will enjoy everything together, sharing stories, savoring the flavors, and celebrating a moment of joy together.

My wife and I took a pasta-making class with Giorgio and Lara. They were absolutely fantastic hosts. They made us feel very welcome and relaxed, and were patient, fun, and approachable. The class was very well structured, with a good balance between demonstrating and doing. We learned how to create the dough, make a couple different shapes of ravioli, and cut the tagliatelle. Giorgio and Lara helped us through the process in a way that was very accessible. We got to eat the pasta and it was delicious. We can't wait to try it again at home! We'd strongly recommend taking a class with Giorio and Lara!

Together with Lara, I open the doors of our home to share a gentle and genuine approach to cooking: from fresh pasta classes, where ancient gestures become modern, accessible experiences for everyone, to our home restaurant, where every dish is brought to the table with care and sincerity. Since I was a child, the kitchen has always been my favorite place. That’s where my passion was born—among the aromas of simmering sauces and flour-covered hands. Over time, that passion became a true calling. I decided to pursue professional training to deepen my techniques and give structure to what had always been driven by instinct and love for food. I love literally “getting my hands in the dough”: from tortellini to gnocchi, from lasagna to spaghetti alla chitarra, all the way to risotto. Every preparation carries the beauty of Italian culinary tradition. My Lucanian roots and Lara’s Sicilian heritage have taught us the value of simplicity and Mediterranean flavors: good olive oil, aromatic herbs, and the authenticity of ingredients from the earth. These values continue to guide us and give flavor to everything we create in the kitchen.
