Bruscitti di Busto Arsizio, or bruscitt in dialect, are more than just a dish: they are an icon of Lombard peasant cuisine, a symbol of conviviality and deep roots. This specialty, created to enhance less prized cuts of meat, is now a true gastronomic excellence, loved and celebrated throughout Lombardy. The traditional recipe calls for beef filleted and slowly browned with fennel and wine, served with a steaming polenta that enhances its rustic and enveloping flavor.
