Cheese cake or Easter cake is a dish that embodies the warmth of the holiday and the flavour of tradition. It is a true journey through ancient, intense flavours and patiently awaited long rising and slow baking, each stage requiring care, dedication and respect for timing.

The cake is very fragrant. In addition to various types of cheese, such as pecorino, parmesan, pizzichino and gruyère, it has aromas of cinnamon, pepper and cloves, which give it an intense flavour in a very soft mixture. This cake is served with various cold cuts, but first and foremost capocollo al pepe, accompanied by a local red wine.

My favorite dishes are those made with long-fermentation doughs. One of my specialties is the Easter cheese bread, infused with the warm and inviting aromas of cinnamon and cloves. All my pasta is handmade, paired with simple yet flavorful sauces, such as *aglione* and white Chianina ragù. For desserts, I often prepare zuppa inglese, made with the traditional Umbrian torcolo soaked in alchermes, and salame del re, two delightful classics of Italian tradition.
