Carpionato del Mondo: a unique culinary experience. The carpione recipe is typical of Piedmont and includes vegetables, red meat, white meat and river fish. This historic recipe was mainly used by farmers to preserve food for longer, thanks to the use of vinegar and white wine, which together create a perfect combination.
