In Parma, in addition to the famous Prosciutto crudo and Parmigiano, we find pastry specialties rooted between Austria and France. My kitchen offers a unique experience inspired by the fine pastry influenced by the tastes of Duchess Marie Louise of Austria, wife of Napoleon and Empress of the French. Enveloped in the scents of almonds, caramel, and vanilla, you will learn how to prepare in your own home typical Parma pastries such as sweet tortelli, tarts, baked cakes, small pastries, stuffed cakes, and the classic rice cake, concluding with a classic tiramisu.
The day with Catia and her lovely family was the highlight of my first trip to Italy. We started at the fresh market local to her. Wonderful fresh ingredients. Once at her beautiful home we got busy right away at making Tortelli D'erbetta. It was so fun and delicious! while we waited for the pasta to rest they had apertifo and bites of local meats, cheeses and parmesan. I will share their family recipes with mine for all the years to come. I left so happy! Thank you Catia and family for a wonderfully memorable day!
