I invite you into my kitchen to share an authentic experience as we discover the most genuine flavours of Ragusa’s culinary tradition. During the class, we’ll get stuck in and prepare three traditional recipes from my region together, learning the secrets and little touches that make Sicilian cuisine so special. We’ll start with breaded and fried caciocavallo, a simple yet flavourful starter, where we’ll discover how to achieve a crispy coating and a melt-in-the-mouth centre. We’ll continue with cavati ragusani, a fresh pasta typical of the area, to learn the traditional technique for shaping them into their characteristic form.

We’ll round off our experience with a fresh, fragrant dessert: gelo di limone, a Sicilian speciality that perfectly captures the aromas of our region.

My family and I had the pleasure of being hosted by Loretta and her brother Charles. They were so warm and welcoming! They showed my niece (10) and nephew (7) how to roll the pasta and shared some amazing food with our family. The wine was plentiful and there was so much food that we could not finish! We especially loved the arancino and the cannolis, and our toast at the end of the night with a house made aperitif! They truly treated us like family, even letting the kids play the piano after dinner. We will never forget the hospitality they showed us. What a special experience! Grazie mille!
