    I’m Eleonora, your Cesarina from Assisi, and I’m thrilled to welcome you to the heart of the historic center of this beautiful city for a culinary experience that will introduce you to the authentic flavors of our tradition. We’ll start with a welcome aperitif, where you’ll taste a selection of local products, perfect for getting acquainted with the flavors of Umbria. Then, we’ll get straight to work! I’ll teach you how to prepare three classic sauces: the savory ragù, the famous amatriciana, and a fresh sauce with cherry tomatoes, olives, walnuts, and breadcrumbs. Each sauce is a simple yet flavorful recipe, which I’ll guide you through step by step. At the end of the course, we’ll enjoy the dishes we’ve prepared, served with a plate of homemade tagliatelle.

    Wow! Had a group of 18 in an amazing pasta-making class in Assisi Italy. The instructor Eleonora was so informative and patient with us. Made the class a highlight of our trip. Not only did we learn to make pasta but we made enough to make several delicious meals as a group. The entire experience was super fun. Highly recommended. A must do if you’re ever in Assisi.

    Our chef and teacher Eleanor was delightful and knows her way around all things pasta. Her skill, patience and individual attention was appreciated. Having never attempted pasta before we were pleasantly surprised and enjoyed a delicious ravioli and hand cut noodles. Loved the tricks when cutting the noodles.
