Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina

Shared Experience
Your experience

I can't wait to welcome you to my cooking school, located in the heart of the historic center of Assisi. Here, among the charming streets of the city, I will guide you through an authentic and convivial culinary experience. We will begin with a welcome aperitif, then we’ll roll up our sleeves and make pasta! I will teach you how to prepare two classic Italian dishes: fettuccine and ravioli. I’ll reveal the secrets of homemade pasta, from choosing the right ingredients to the perfect technique for creating a smooth and elastic dough. After the class, we’ll enjoy together the dishes we’ve prepared. It’s an experience filled with flavor, fun, and togetherness, perfect for those who want to discover the true spirit of traditional Italian home cooking. I look forward to seeing you!

Eleanora and Francesco were absolutely fantastic. Their hospitality and expertise with attention to detail made the experience once in a lifetime. Def going to do a wine/cheese tasting party with Francesco when he goes to the States in Nov. 2026.

Eleonora was spectacular. She was very thorough in her presentation and very encouraging but not afraid to correct our mistakes. Highly recommend

Eleanora was so fantastic. What a lovely lady. We enjoyed her lessons so much. She spent extra time with us. We enjoyed the cheese and wine tasting beforehand as well. I did so much we even purchased wine and olive oil to have sent home. Her grandson’s run the wine, cheese and olive oil store and they are absolutely adorable and knowledgeable.

It’s 10:00 AM and I am in Assisi, in front of Eleonora’s cooking school when I hear: - Good morning! It’s Eleonora who welcomes me with a warm smile. I respond with a good morning and specify that I am Italian and don’t know how to make pasta by hand. Smiling, she reassures me and invites me to a tasting of local cured meats, cheeses, oil and wine at the Wine Store located in front of the school. It’s a pleasant moment where I get to savor authentic delicacies and where I meet my classmates: three very nice Norwegian girls. But it’s time to get our hands dirty! Work surface and rolling pin await us; Eleonora, in a white smock, takes on her role while we, each with an apron with the words "Cesarine" and a chef's hat, listen carefully to her instructions. Finally, here’s our first sheet of pasta and, with exclamations of amazement, we make fettuccine, but the greatest enthusiasm comes with the ravioli that look like the work of a master pasta maker. We have so much fun! The experience isn't over: we have to taste the ravioli. Eleonora has set the table just like for a family lunch and after toasting with “Skal” we savor the fruits of our labor. Thank you from the bottom of my heart, dear Eleonora, for the welcome you gave us and the passion you transmitted to us. I will carry in my heart the memory of this unforgettable day but I would like to conclude with a sentence from the story: "Babette’s Feast". "Happiness can consist of giving everything you have, in an exchange of mutual pleasure that involves both the senses and the spirit."
