My style in the kitchen is a combination of grandmother's touch and modern techniques in order to preserve flavors, colors and nutrients, and enhance taste sensations with spices, herbs and love of food.I deal with all aspects of food, from sensory research to nutritional aspects, from social to environmental issues, and for pleasure, taste, and values I use only seasonal and fresh products, preferably organic, local, or from a fair trade supply chain and Slow Food presidia.My goal is to recover and spread popular traditions and flavors, with an eye always on the quality and healthiness of food.
