    Prepareremo un'impasto vegano mescolando farina e acqua, con la possibilità di aggiungere spinaci e basilico per una sfumatura verde, oppure barbabietola per un vibrante rosso. Il ripieno sarà a base di verdure di stagione come melanzane, carciofi, zucca e patate, per un risultato gustoso e genuino. Ci divertiremo a creare ravioli di varie forme, dal classico tortellone a quelli rotondi, e con la stessa pasta realizzeremo tagliatelle, tagliolini e fettuccine, condite con un profumato pesto di arance, pinoli, basilico, menta e melanzane fritte. Il tutto accompagnato da un brindisi con un ottimo prosecco italiano e un antipasto tipico: lo sfincione siciliano.

    Our cooking class with Rosa Maria was the absolute highlight of our trip to Italy. From the moment we arrived, she and her husband welcomed us into their home with such warmth and kindness that we immediately felt like part of their family. The food was incredible—honestly the best we had in Palermo—and it tasted even better knowing we had made it ourselves.     Simply the highlight of our trip. Rosa Maria was a gracious and welcoming host and an excellent teacher. We learned so much in a short amount of time with Rosa Maria’s expertise and guidance.     In Sicilia, e in particolare a Palermo, la cucina regionale ha un profilo ben definito: pasta, olio d’oliva, verdure e pesce azzurro sono i miei quattro punti cardinali in cucina. I piatti che preparo rispecchiano questa tradizione, che amo reinterpretare con fantasia e con la voglia di sperimentare, sempre nel rispetto delle antiche ricette. Propongo piatti legati indissolubilmente ai prodotti e alle materie prime della nostra isola. Vi accolgo con piacere a Palermo, ma attraverso i miei sapori vi porto anche a scoprire i profumi di Favignana, di Ustica e di San Vito Lo Capo.
