    Italian cuisine has many ravioli recipes,they are my passion and I have experimented with many versions of this dish.

    We will prepare three recipes , starting from the same scratch, but in three different colors. Three different fillings will turn ravioli into a delicate appetizer, a tasty first course and finally an original dessert. Appetizer: Green ravioli filled with ricotta and lemon, dressed in tuna sauce. First course: Ravioli prosciutto*and Robiola cheese with Parmesan, butter and sage. Dessert : Giant Sweet Cocoa ravioli with caramelized pears or berry coulisse. Bread or Bruschetta, one bottle of wine, water and coffee complete the experience.

    *If you're vegetarian, let me know when you book: we'll make Swiss chards Ravioli instead, a typical recipe from my area, Lake Como.

    Wow this was the highlight of our trip/Honeymoon in Como! We were so surprised by how intimate this whole experience was! It felt like we were invited over for a private dinner with friends! Monica was so welcoming and the best hostess + instructor. She has a passion for cooking and creating the most memorable experiences.     Monica’s home is about a 10-minute walk from the lake and easy to get to. Monica provided a wam welcome and a cold drink before we started on what was a very informative, authentic and incredibly enjoyable evening. We had a beautiful bresaola starter, followed by some bruschetta with two cheese accompaniments prepared by Monica by way of intros. There were various drink options too! We then got down to the hard work of preparing our meals - a wonderful ravioli, a flavoursome fettuccine ragu and followed by a filling tiramisu. Nothing like we have eaten before - again very authentic, beautifully presented and tasted exquisite. Really enjoyed Monica’s teachings, her company and her unique home style.     It is no wonder that Monica receives 5 star ratings. Her passion for food quality and sustainability is evident in the ways she talks about it. I booked this class for the purpose of making Tiramasu with an Italian cook. But I learned much more. Monica showed me how to make ravioli and fettuccine. Her home is lovely, full of beautiful art, but mostly welcoming to guests. I spent an evening with other guests representing 4 nations. Food is the common language of humanity that turns strangers into friends. I appreciate so much Monica's warm hospitality and patience teaching simple but delicious cooking. Monica, grazi mille!
