  • Parmigiana (traditional dishes with eggplants, tomatoes, mozzarella and basil)

Parmigiana has a thousand stories and variations, but only one certainty: it is a southern masterpiece. Sicily, Campania or Puglia? Impossible to say for sure. What does not change are the basic ingredients: fried eggplant and tomato sauce. In our version, eggplants are breaded and fried, then alternated in a "tiella" with mozzarella, mortadella and basil sauce. After about 30 minutes in the oven and a short rest, we will enjoy together this dish rich in aromas and flavors. An authentic experience that tells the story of our land, from the first bite to the last memory.

Excellent experience visiting Barbara and her family and learning to make pasta. We had a really lovely meal prepared for us and enjoyed hearing about the dishes that had been prepared. 100 per cent positive experience!
