Fava beans and chicory is a typical recipe from the long culinary tradition of Puglia. This complete dish combines legumes in a glossy puree, accompanied by chicory, whose bitterish flavor balances the sweetness of broad beans. Perfect for a full meal or as an aperitif, paired with a glass of wine, it is a unique experience in preparation. Broad beans can be served separately, in a single dish, or made into croutons for an appetizer. In addition, they can be mixed in bowls for a unique flavor. The process begins the night before, to turn the dried broad beans into a fluffy puree. A dish that encompasses all the simplicity and goodness of Apulian tradition, capable of giving emotions with every taste.
