Ensemble, on va préparer deux types de pâtes fraîches : l'une farcie et l'autre non farcie.

La première création sera des tortelloni verts farcis d'une délicieuse ricotta ou d'une succulente citrouille, tandis que le deuxième plat sera des busiate (un type de macaroni sicilien) alla norma, une pâte fraîche sicilienne emblématique soigneusement enroulée autour d'une broche. Enfin, et ce n'est pas le moins important, nous nous consacrerons à la préparation d'un authentique tiramisù, en suivant la recette originale transmise dans ma famille de génération en génération.

We had the most wonderful experience with Rosa Maria making arancine. We were a group of 7 all family traveling together in Sicily. We make “arancinis” at home and had so much fun learning more about the culinary tradition as it is done here in Palermo. Rosa Maria and her helper was gracious and friendly. I would absolutely take another class with them.

En Sicile, et en particulier à Palerme, la cuisine régionale a un profil bien défini : les pâtes, l'huile d'olive, les légumes et les poissons bleus sont mes quatre points cardinaux en cuisine. Les plats que je prépare reflètent cette tradition, que j'aime réinterpréter avec imagination et envie d'expérimenter, toujours dans le respect des recettes anciennes.  Je propose des plats indissociables des produits et des matières premières de notre île. Je vous accueille avec plaisir à Palerme, mais à travers mes saveurs, je vous emmène également à la découverte des parfums de Favignana, d'Ustica et de San Vito Lo Capo.
